Puppy Love!







Yes - it's true we added another puppy to our crew. We call her "JENNA".

Small Town Blessings

We have been blessed!!

The Homeschool Co-Op welcomed us into their community this past school ('07'-'08) year. The older girls have really enjoyed all the youth events and activities, the most recent "Get Smart" play production and cast party. We look forward to next year.

The end of the year family picnic was held at Casel-Land, a small amusement park. There were go-karts (Nathan's favorite), bumper-boats, and mini-golf. Our entire family had a blast!!! You should have seen Eric climb into one of the go-karts with Abby, he was eating his knees.

The kids just completed two weeks of swimming lessons at the city pool.

The local PORTALES library offers many types of reading programs for all ages. The new children's librarian, Ms. Heather, has been an awesome asset.

Hannah won the High Plains Film Festival in May.

Rachel won honorary mention in the library poetry contest.

Nathan had a great first time baseball season.

Abby recently got her ears pierced and makes friends wherever she goes.

We discovered that the Eastern New New Mexico University's Golden Library has an Educators Resource Center, its a room filled with all types of curriculum and manipulates. A small jackpot for the homeschool family.

GOD IS GOOD. ALL THE TIME!!

Dry, Crunchy Grass with Stickers


In my lifetime I never thought that I would ever desribe my yard with the word CRUNCHY! After all, my yard was always filled with a large varitey of flowers and trees, not to mention the veggie garden. I loved sharing produce and fresh cut flowers with friends and neighbors. I was always in competion with my mother-in-law. These days, SHE WINS!! Going bear foot in the summer has always been a favorite pass time. However, we have learned quickly, that around here it is dangerous to walk around outside without footwear. Lack of rain and constent winds produce - DRY, CRUNCHY GRASS and ours is full of stickers too! I love the way my daughter recently put this experience into words.

New Mexican Dinner


Beans and Rice
2 cans Bush Pinto Beans in Chili Sauce
1 cup rice (cook it first)
2 cups shredded cheese (I used cheddar and Monterrey jack)
1 lbs. ground beef (cooked)
1/2 cup salsa or more to taste
Combine the above ingredients. Place in a casserole dish. Bake at 350 for about 30 minutes or until heated through

Corn Bread
1 cup flour
1 cup yellow cornmeal
¼ c. sugar
4 teaspoons baking powder
¾ teaspoon salt
2 eggs
1 cup milk
¼ c. cooking oil or shortening (melted)

Preheat oven to 425 degrees. Sift together flour, cornmeal, sugar, baking powder, and salt. Add eggs, milk and oil. Beat until just smooth (do not over beat). Turn into greased pan 9x9x2-inch baking pan. Bake 12 to 15 minutes.



Calabeseata
¼ c. chopped onion
¼ c. chopped green bell pepper
Japelano pepper (to taste)
Saute’ the above ingredients, next add the squash
3 to 4 Zucchini and/or yellow squash
Once squash is steamed or a bit softened, add the cream cheese and sour cream
4 oz. cream cheese
½ c. sour cream
Top with cheddar cheese just before serving.
